Pesto Avocado Melt With Veggie Bacon


There is nothing better than melted cheese, avocado, tomato, pesto, and plant-based veggie bacon bits melted together between two slices of bread. You simply have to try it and that's the end of that story. Your BLAT is ready and it is veggie approved.

  • 1 Avocado

  • Tablespoon Lime Juice

  • Salt to Taste

  • Pepper to Taste

  • 4 Slices Sandwich Bread

  • 1/4 cup Cool Foods Hickory Smoked VeggieBacon

  • Sliced Tomato

  • 2 Leaves of Romain Lettuce

  • 1 Slice Cheddar Cheese 

  • 1 Slice Swiss Cheese

  • 1/2 Tbsp Butter or About 2 Tsp. Olive Oil

  • Home Made or Store Bought Pesto


  1. Mash avocado lightly with a fork. Add lime juice, salt and pepper to taste and set aside.

  2. Prep tomato, lettuce, cheese, and veggie bacon.

  3. Place one slice of cheese on each slice of bread followed by lettuce, tomato, avocado and Cool Foods Veggie Bacon Bits

  4. Top each sandwich with one of your remaining bread slices to close.

  5. Coat a large skillet with butter or olive oil and place over medium heat.

  6. Place sandwiches in skillet and cook until browned on each side, about five minutes per side.
