Veggie Twice Baked Potatoes

With Veggie Bacon


You know that feeling when you think baked potato, and you are all like...MEH?  Well put that MEH to bed and say hello to the most mouth-watering baked potato with a kick of bacon flavor, that is all plant-based! This is a gateway recipe as we like to call it. Once you make this tater it will open your eyes to a multitude of possibilities utilizing our plant-based veggie bacon topper.

  • 2 Medium sized baking potatoes

  • 2 Tbsp. margarine or vegan margarine melted

  • 1/2 cup unsweetened non-dairy milk of choice

  • Salt to taste

  • Black pepper to taste

  • 2-3 Scallions chopped

  • Hot sauce to taste optional

  • 1/2 Cup Cool Foods Veggie Bacon


  1. Preheat oven to 425.

  2. Scrub potatoes and puncture a few times with a knife.

  3. Bake until easily pierced with a knife, about 1 hour and 15 minutes. You want them nice and soft so the insides mash up well.

  4. Remove potatoes from oven and cut in half, lengthwise. Scoop insides into a medium bowl. Mash with a potato masher (or use a mixer if you like your taters fluffy).

  5. Add margarine, milk,  salt, pepper and hot sauce if using. Mash until well mixed, then fold in scallions. You can add a little extra milk if it seems necessary to get a nice creamy consistency.

  6. Divide potato mixture and spoon back into skins. Return to oven and bake for another twenty minutes, or until tops begin to brown. Remove from oven and top with Cool Foods Veggie Bacon Bits!


  1. Mash avocado lightly with a fork. Add lime juice, salt and pepper to taste and set aside.

  2. Prep tomato, lettuce, cheese, and veggie bacon.

  3. Place one slice of cheese on each slice of bread followed by lettuce, tomato, avocado and Cool Foods Veggie Bacon Bits

  4. Top each sandwich with one of your remaining bread slices to close.

  5. Coat a large skillet with butter or olive oil and place over medium heat.

  6. Place sandwiches in skillet and cook until browned on each side, about five minutes per side.

  • 2 Leaves of Romain Lettuce

  • 1 Slice Cheddar Cheese 

  • 1 Slice Swiss Cheese

  • 1/2 Tbsp Butter or About 2 Tsp. Olive Oil
